About Cabo
“Imagine yourself driving down a rocky dirt road, with surfboards strapped to the roof, in what appears to be the middle of nowhere. To your right a bare steer skull. To your left nothing but bone dry desert and cacti. Within minutes the desert opens up to present the Pacific Ocean as the backdrop to a small Mexican fishing village. Driving into the town you see a beautiful beach with perfect six foot-swells rolling in. But before you actually get to the beach you see a small stand and a sign that says, “taco de pescado”. Translation: fish tacos. You wonder to yourself, what in the world is a fish taco?
Folks traveling through Baja California found that The best fish tacos were first offered in local stands on the side of the road, often run by the Mexican fishermen themselves. Fish tacos were first brought to Southern California by surfers in search of Mexico’s big waves. It didn’t take long before the hand-crafted fresh seafood tacos made their way back to beachfront restaurants in San Diego.
Cabo Fish Taco is the combination of concepts from three completely different people, who share the same idea of what makes a restaurant great. Question: With all the franchise opportunities, what made you select Cabo Fish Taco & the Restaurant business?
Reply: As our business enterprise grows, the number one item the three of us hold as most important is that we want to partner with people we enjoy working with, not just make a quick buck.
Question: How did you select the Ballantyne location, what type of research was involved?
Answer: Luckily, Craig, Rich, and I live close to the Ballantyne area. We felt for some time that the area needed some additional dining options, especially ones that are home grown. As for the specific location, it is a site that Rich had monitored for some time. A lot of different folks were consulted, but in the end, our guts were telling us this is definitely a location we think we can bring a great product to a community looking for it.

What attracted us to Cabo Fish Taco was its great food and brand awareness. What we have really come to appreciate is the attention to the process from the front to the back of the house. Everyone at Cabo Fish Taco has put a lot of effort to deliver fresh and delicious food at an efficient pace with their customers satisfaction front and center. It is impressive how much thought, care, and time has been put into the restaurant. We’re really excited to be a part of it and bring it to Ballantyne.
Rob Crenshaw (the Chef), his wife Maeghan (Cabo’s backbone) and Gary Walker (the numbers man), are the co-owners of Cabo Fish Taco. Cabo Fish Taco is a culmination of the ideas and hard work of these three friends who “set out to create a unique restaurant focusing on fresh exciting cuisine and an exciting upbeat atmosphere”. According Rob, Maeghan and Gary, “We have tested and refined all of our recipes, systems, and procedures and feel it’s the right time to respond to the constantly growing demand of ‘We need one of these in our town’”.
